I always like to make a fun and festive breakfast on Christmas morning. My kids love fun and festive holiday foods. So these Grinch Pancakes are always a hit. These made from scratch buttermilk pancakes are easy to make, and even better topped with cream cheese frosting.

These pancakes are great for breakfast, but it also be great served while watching a Grinch Movie. This green buttermilk pancake recipe is delicious and my daughter also likes to add green whipped cream and red sprinkles.

How to Make Grinch Pancakes

Step 1 – Combine Glaze Ingredients – Beat together the glaze ingredients. Mix with a hand held or stand up mixer until creamy and smooth (approximately 2 minutes).  Set aside.

Step 2 – Beat heavy cream, powdered sugar and vanilla – Beat together the heavy whipping cream, powdered sugar and vanilla extract. Mix in a large bowl on low speed until bubbles start to form. Add in the green food coloring until the mixture is the color you prefer. Then beat on high speed until stiff peaks form.

Step 3 – Whisk dry ingredients – In a medium size bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

Step 4 – Mix in milk, egg, butter and food coloring. – In a separate large bowl whisk together the in the milk, egg, melted butter and green food coloring. 

  • Step 5 – Combine dry and wet ingredients – Add the dry ingredients into the wet ingredients. Mix for approximately 30 seconds until the ingredients are combined.  
  • Step 6 – Heat Skillet – Preheat a griddle, cast iron skillet or non stick skillet over medium high heat.  Grease with a non-stick cooking spray or a small amount of butter.
  • Step 7 – Add Butter – Add the batter to the pan in approximately ¼ cup scoops.
  • Step 8 – Cook Pancakes – Cook for 2-3 minutes until small bubbles start to appear at the top of the pancake.  Flip the pancake and finish cooking for 2-3 more minutes until golden brown.
  • Step 9 – Continue until all pancakes are cooked. – Transfer the pancake to a plate and continue this process until all the batter is used
  • Step 10 – Stack Pancakes – Stack the pancakes on a plate. 
  • Step 11 – Drizzle the Glaze – Drizzle the glaze on top and top each stack with the green whipped cream. 
  • Step 12 – Add your Toppings – Sprinkle the red heart sprinkles on top. Then the pancakes are ready to serve and enjoy.

Recipe Tips

  • Prepare Skillet – Cook the pancakes in a skillet over medium heat. Make sure to add butter to prevent the pancakes from sticking to the skillet.
  • Cream Cheese Glaze – When combining the cream cheese, powdered sugar, vanilla make sure to mix until smooth and creamy.
  • Green Whipped Cream – The green whipped cream is the perfect addition to these pancakes. After combining the ingredients, make sure to allow it to chill in the fridge.
  • Cooking Pancakes – Cook the pancakes on each side until golden brown. You will know when the pancakes are done when the small bubbles start to appear.

How to Store Leftover Pancakes

For the Pancakes:

  • 1 cup All Purpose Flour
  • 2 Tablespoons Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 cup Whole Milk
  • 1 Egg beaten
  • 2 Tablespoons Butter melted and cooled
  • Green Gel Food Coloring bright green

For the Glaze:

  • 4 ounces Cream Cheese
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Heavy Whipping Cream

For the Green Whipped Cream:

  • 1/2 cup Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Vanilla Extract

For Serving:
