Grinch Cake balls are delicious, easy to make and made with a fun green color. We love baking during the holidays and this is always on the list. Grinch desserts are always so fun to make and always a crowd favorite.

We start with red velvet cake and then mixed with cream cheese frosting to form the cake into cake balls. Then the Christmas cake pop are dipped into a fun melted green color and decorated for the perfect holiday dessert.

Ingredients: 

Ingredients needed - red velvet cake mix, cream cheese frosting, cake pop sticks, candy melts, vegetable shortening, red candy hearts
  • Red Velvet Boxed Cake Mix (and ingredients called for on box to make the cake)
  • Cream Cheese Frosting I used pre-made
  • Cake Pop Sticks or Lollipop Sticks
  • Vibrant Green Candy Melts
  • Vegetable Shortening 
  • Red Candy Hearts (or Red Candy Sprinkles)

Variations:

  • Change Cake Mix – Feel free to change the cake mix to chocolate or vanilla cake mix.
  • Change the Coating – Instead of using candy melts, you can chocolate chips. Chocolate covered cake balls or vanilla covered cake balls are always a great option. We love green chocolate cake balls and drizzled with melted green candy.
  • Sprinkles – Instead of red heart candy, you can top with red sprinkles.

Step by Step Instructions:

Step 1 – Prepare the red velvet cake based on the package instructions.  Bake according to box instructions. Then let the cake cool at room temperature.

Step 2 – Remove the cake from the pan.  Remove the brown outside layer from the cake and throw it away.  Crumble up the remaining cake into a large bowl.

Step 3 – Add the cream cheese frosting to your crumbled cake and stir everything together until well combined.

Step 4 – Shape mixture into about 24-36 cake balls (depending on their size) and place on a lined cookie sheet. I used a cookie scoop to ensure that each one is approximately the same size.

Step 5 – Melt the green candy melts in a microwave-safe bowl. Dip each cake pop stick into the green melted candy. Then place them into the cake balls about halfway through the balls.  Then place in the freezer for 10-15 minutes on a lined baking sheet with parchment paper.

Step 6 – After the cake pops have been in the freezer, dip each cake pop into the melted candy melts.

  • Step 8 – Dry cake balls – Then place the stick of cake pops in a block of Styrofoam while the candy dries and solidifies.  
  • Step 9 – Place Candy melt in piping bag – Place the remaining candy melts in a decorator’s bag and cut off the end of the bag at a 45 degree angle.  
  • Step 10 – Decorate – Drizzle the remaining candy melt over the top of each of the cake pops and place a red candy heart or sprinkles onto each of the cake pops before the candy melts hardens. 
  • Step 11 – Serve and Enjoy – Continue until all the candy coating cake pops have been covered and decorated.  Once all the cake pops are dry, they are ready to serve and enjoy.

Recipe Tips:

  • Smooth Cake Balls – For best results, we like to have a smooth cake balls before dipping. You may need to roll the balls in your hand after freezing them.
  • Melting Chocolate – We recommend melting the chocolate in 30 seconds intervals until melted. Melt the chocolate in a tall glass to easily dip the cake pops into the melted chocolate.
  • Cookie Scoop – To keep the cake pops about the same size, we like to use a cookie scoop to form the balls.
  • Dipping Stick – To keep the stick in place in the cake balls, I like dip into the melted chocolate before dipping to the cake balls.
  • Candy Melts – When choosing the chocolate or candy melts, use quality ingredients.

How to Store:

Refrigerate the leftovers in an airtight container for up to 1 week. 

Can you Freeze Cake Pops?

Yes, you can freeze cake pops prior to dipping into melted chocolate. Place the prepared cake balls on a baking sheet to freeze. After about an hour, place in a zip lock freeze bag to free up to 2 months.

  • 12 oz Vibrant Green Candy Melts
  • 1 teaspoon Vegetable Shortening
  • 36 Red Candy Hearts or Red Candy Sprinkles

  • Put the green candy melts and vegetable shortening in a small microwave safe bowl and microwave for 30 seconds, then stir.  Then continue to heat in 30 second intervals stirring between each one until the candy melts are fully melted and creamy.
  • Dip each cake pop stick into the green melted candy and then place them into the cake balls about halfway through the balls.  Then place in the freezer for 10-15 minutes.
  • After the cake pops have been in the freezer, dip each cake pop into the melted candy melts (you may need to re-melt the candy melt if it has solidified some).  Make sure that the candy covers the cake pop completely.  Allow the excess melted candy to drip off back into the bowl.
  • Then place the stick of cake pops in a block of styrofoam while the candy dries and solidifies.
  • Place the remaining candy melts in a decorator’s bag and cut off the end of the bag at a 45 degree angle.
  • Drizzle the remaining candy melt over the top of each of the cake pops and place a red candy heart or sprinkles onto each of the cake pops before the candy melts hardens.
  • Continue until all the cake pops have been covered and decorated.  Once all the cake pops are dry, they are ready to serve and enjoy!
