Variation Ideas

  • Cookie Base – This chewy cookie dessert can be changed to whatever you prefer. You can make the cookie base as a sugar cookie or with a prepackaged cookie mix.
  • Change the M&M – We love the Red & Green M&M’s. But feel free to change the M&M’s colors to what you prefer. You can use this holiday cookie recipe for different holidays.
  • Sprinkles – Feel free to use different sprinkles. Red and Green are perfect for Christmas but you can also use other colors.
  • Chocolate Chips – We used semi-sweet chocolate chips, but you can use dark chocolate chips as well.
  • Cake Mix Cookies – Feel free to make cake mix cookies with this recipe. These taste amazing and make great gifts.
  • Frosting – Feel free to use different frosting. We love making frosting from scratch. But you can use store bought frosting as well. Chocolate frosting or chocolate buttercream frosting for delicious flavor.
  • Nuts – If you like nuts in your giant cookie cake, you can easily mix in the chopped nuts in your cookie batter.
  • Step 1 – Heat Oven – Preheat the oven to 350 degrees. Spray a 9 inch round cake pan with a non-stick baking spray.

Step 2- Beat Butter and Sugars – In a large mixing bowl, beat together the butter with brown sugar. Mix in granulated sugar until creamy.  Then add in the egg and vanilla extract.

Step 3 – Mix in dry ingredients – Mix in the baking soda and salt.  Then slowly add in the flour until just combined. Combine in the bowl of a stand mixer or a hand mixer.

Step 4 – Stir in chocolate chips – Stir in the chocolate chips and half of the M&Ms into flour mixture. Cream with a wooden spoon and scraping the sides with a spatula.

Step 5 – Press Cookie Dough into pan – Press the cookie dough batter into the prepared pan. Then press the remaining M&Ms and the sprinkles on top.

Step 6 – Bake Cookie Cake – Bake for 20-25 minutes or until the edges are just starting to turn slightly golden brown.  Be careful not to overcook. It’s better to under cook the cookie dough than over bake it. As the cake will continue to cook as it cools.

Step 7 – Prepare Frosting – Beat the butter with a hand held mixture until smooth.  Then slowly add in the powdered sugar.  Add in the vanilla extract and slowly add in the milk until creamy.

  • Step 8 – Pipe Frosting – Pipe the frosting with a star tip onto the edges of the cookie cake. Top with more sprinkles and M&Ms if you prefer.
  • Step 9 – Serve and Enjoy – Then the cake is ready to slice, serve and enjoy. 
  • Mixing Dough – Make sure not to over mix the cookie dough or the cookie cake will be tough.  Mix ingredients with a stand mixer with a paddle attachment.
  • Pie Dish – This cake can be made in a 9 inch pie pan as well. A springform pan works great too.
  • Baking Cookie – Make sure to not overcook cookie. It is better to cook cookie until just about done. Then allow to finish cooking after removing from oven.
  • Line Bottom of Pan – Prepare the baking dish by spraying the pan with cooking spay. You can also line the baking dish with parchment paper to easily remove the cookie cake.
  • Press Cookie Dough – Press the cooking dough into the baking dish so that it completely covers it.

This Christmas Cookie Cake can be decorated in many different ways. You can use sprinkles, M&M’s or drizzle with melted candy melts.

Use a piping bag to create a fun topping for the cookie cake. You can even add food coloring to your frosting to add color to your cookie cake.

How to Serve

Once you have prepared the cookie cake, place it on a cake stand so it is easier to decorate and serve.

Slice the cookie cake with a sharp knife and serve on a plate. You can even serve with additional icing or a scoop of vanilla ice cream.

We like to remove the cookie cake from the pan to easily cut the cookie for serving.

Ingredients

For the Cookie Cake:

  • ½ cup butter softened
  • 1/2 cup packed brown sugar
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions
