Variations Ideas

  • Pink Peppermint Ice Cream – Feel free to use different flavors of ice cream. You can layer in vanilla ice cream, chocolate ice cream or strawberry ice creams. Mint chocolate chip ice cream is also a great suggestions.
  • Crust – You can easily make the crust with other types of cookie crumbs. Gingersnaps is a great option.
  • Topping – Add your favorite topping which could include caramel sauce, fresh berries, cherries or a dark chocolate sauce. Chopped nuts is a great topping such slice almonds.
  • Peppermint Candy – Instead of candy canes use peppermint candy.
  • Peppermint Extract – To enhance the peppermint flavor, add in a teaspoon of peppermint extract.

Step by Step Instructions

Step 1 – Crush the Oreo Cookies into large pieces.

Step 2 – Spread them along the bottom of the pan and reserve some of the crushed Oreos for the topping.

Step 3 – Spread half of the ice cream on top of the Oreos in the pan.  Place in the freezer for 10-15 minutes.

Step 4 – Unwrap the ice cream sandwiches.  Layer the ice cream sandwiches on top of the ice cream in the pan.  You can cut some of the sandwiches to make sure that they all fit in the pan.

Step 5 – Spread the remaining ice cream on top of the ice cream sandwiches. Cover and freezer for at least 3-4 hours.

Step 6 – When serving, top the cake with the whipped topping.  Drizzle the hot fudge topping on top and top with the crushed candy canes and reserved chopped Oreos.  Slice, serve and enjoy!

  • Prepare Baking Dish – Line a 9X13 baking pan with parchment paper or wax paper. Make sure that the paper overhangs the pan for easy serving of the ice cream cake.
  • Freezing Layers – Allow the layers to freeze as the recipe indicates. This allows the layers to completely freeze before adding a new layer. Then freeze for at least 3 hours before serving.

  • 1 gallon Peppermint Ice Cream softened
  • 12 Ice Cream Sandwiches
  • 8 ounces Whipped Topping Cool Whip
  • Hot Fudge Topping for topping
  • 1/4 cup Crushed Candy Canes
