We spend a lot of time during the holidays baking desserts. We love making our classic banana bread and cinnamon bread recipe for gifts. Chocolate Chip Cookies and Sugar Cookies are also on the list for a fun activity with my kids.

What Makes Quick Breads Different?

Quick breads are made without yeast. They are made with leavening ingredients such as baking soda or baking powder. There is no need to knead breads after making the dough.

The ingredients are simply combined in a bowl and then poured into a loaf pan. Which makes this a quick bread recipe.

Variations Ideas

  • Frosting – Feel free to use different types of frosting for this recipe. We also have used a cream cheese frosting for the perfect breakfast recipe.
  • Mini Loaf Pan – Make this quick bread in mini loaf pans for the perfect size to give out as gifts.
  • Top the Bread – Mix together cinnamon and sugar and sprinkle over the top before baking the bread.
  • Chocolate Chips – For added flavor, you can easily add in white chocolate chips or milk chocolate chips.

How to Make Christmas Funfetti Quick Bread

  • Step 1 – Heat Oven – Preheat the oven to 350 degrees Fahrenheit. Then spray a 9X5 loaf pan with non-stick cooking spray.

Step 2 – Beat Butter and Sugar – In a large mixing bowl, beat together the butter and sugar. Mix with a hand held mixer or stand up mixer until light and fluffy.

Step 3 – Stir in Eggs – Stir in the eggs and vanilla extract until combined.

Step 4 – Add Milk – Then mix in the sour cream and milk.

Step 5 – Combine Dry Ingredients – In a separate bowl, whisk together the flour, baking powder, salt and baking soda.

Step 6 – Mix Wet and Dry Ingredients – Hand stir the dry ingredients into the wet ingredients until just combined.  Be careful not to over mix.

Step 7 – Stir in Sprinkles – Carefully stir the sprinkles into the batter.  Do not over stir in the sprinkles may bleed into the batter.

Step 8 – Pour Batter – Put the batter into the prepared pan.  Bake for 60-70 minutes until a toothpick inserted into the center of the bread comes out clean.

Step 9 – Place on Cooling Rack – Let cool for 5 minutes, then move to a wire rack to cool completely.

Step 10 – Stir Ingredients – Stir together the powdered sugar and heavy whipping cream.

Step 11 – Spread Icing – Spread the icing on top of the bread with a spatula and top with Christmas sprinkles. hen the bread is ready to slice, serve and enjoy.

Recipe Tips

  • Baking Bread – If the bread is getting too brown while it’s baking. Cover it with foil to keep it from getting too bad.  
  • Combining Ingredients – When combining the ingredients make sure to not overmix. This could cause the bread to be dry or tough.
  • Prepare Loaf Pan – Spray the loaf pan with cooking spray. We also recommend lining the pan with parchment paper. This way you can easily remove from the bread from the pan to slice.
  • Stirring in the Sprinkles – We recommend using Jimmies Sprinkles to mix into this quick bread recipe. These sprinkles prevent them from bleeding into the batter.
  • Baking Bread – Bake the bread for about 60 minutes. You will know the bread is done cooking when the toothpick inserted comes out clean. Bake time will vary based on the size of the loaf pan or your oven.
  • Make Ahead – This is a great recipe to make ahead of time. Simply prepare the bread recipe and then frost when ready to serve.

Can I Freeze Quick Bread?

Allow the bread to completely cool. Then wrap in aluminum foil or plastic wrap. We recommend freezing the bread unfrosted.

  • Place inside a freezer bag or container. It can be frozen up to 2 months. You can freeze it by the loaf or in individual slices.
  • We actually double this recipe so we can have extra to freeze. It is convenient for gifting to others as well as a quick breakfast. Either way, it is so handy and not anymore work to make double.

The recipe is effortless. When ready to enjoy, allow to thaw overnight at room temperature. If you froze the quick bread into slices, you can warm it in the microwave for 15 seconds.

How to Store Leftover Quick Breads

Store leftover Christmas quick bread at room temperature in an airtight container for up to 5 days.  It does not have to be refrigerated but it will last longer if you do.
Make sure to cover tightly so the bread stays moist and does not dry out. This is crucial to ensure the bread is sufficiently moist.

Instructions
